how would you turn a .wav file into a midi file???

Simple answer: you don't. Lots of discussion on this can found by using http://www.noteworthysoftware.com/ as a launch point and following the links provided therein.

Easiest and best midi2wav I have found is the Roland Virtual Sound Canvas (VSC-883H). You can pick it up at http://www.edirol.com/ for $69. Superb sound, incredibly simple. Just load your MIDI file in the VSC player and click the Audio Convert button.

If your music is monophonic, then you can definitely can convert WAV into MIDI.

The best software I have found is called "Digital Ear". Digital Ear's website is:
