passing notes

Does anyone know of a way to score passing notes when they occur in the middle of a chord (rather than at the top or bottom)?

You mean if you had, say, a half note above and below moving quarters on the same staff? You get that a lot in guitar music and sometimes keyboard... I do it by layering staves -
copy the entire part onto a new staff below it, then change the lower staff to the lower held notes you want and put the moving part and the upper notes on the upper staff. Then layer the parts.

If it's only one note in an entire piece and you really don't want the extra staff, you could draw a note or two in as a text expression using the NWC15 font as one of your user fonts, but you won't hear those notes on playback.
