I am writing a symphony and I have the first two movements done but I cant get anything that sounds good out of my head! Think I should just take a few days off? I have been working for weeks

No, just go for a wander around outside, relax a bit and let the sounds come to you. Or steal something.

Read a book about harmony and counterpoint while listening to Mozart. Then take a long walk.
