I notice that insert MPC commands into NoteWorthy Composer scores results in a lot of unpredictability. Specifically, I notice that when I do a linear volume sweep coming up from a pianissimo, to say, a fortissimo, the fortissimo that results is not as loud as one that came before the MPC command. I checked the exact MIDI volumes.

For example, a fortissisimo (a full 127) played at the beginning of a piece does not sound like a fortissimo played at any point in a piece after the MPC, though NWC should play that one at 127 too. Any suggestions? Am I not using an appropriate controller?

Yes! You are not using the appropriate controller?
MPCs don't control note VELOCITY (ppp - fff) (ff by default). You are probably fiddling with channel VOLUME (127 by default).
For a "volume sweep", I would suggest
1) on long notes, use the channel volume MPC
2) on a series of notes, use cresc./descresc. between appropriate dynamic markings.
