Title: Drums staff

How do you add drums? I can see them in extracted midis with the instrument patch as the Grand Acoustic Piano, but of course when I put {001} into the staff it just gives me piano sounds and not drum ones.

Change the midi channel to channel 10. This is the percussion channel.
The midi channel can be found at Staff properties (F2) midi tab. Change the number here from whatever it's set at to 10.

Should fix the problem

You need to set the midi channel for the staff to 10 for most sound cards.  If you have a very old sound card, it may be on channel 16.

The clef should also be Bass (or Percussion in NWC2).

When you installed NWC, there was a sample file called DRUMREF.NWC placed in "C:\Program Files\NoteWorthy Composer\SAMPLES".  This will tell you what drums are available on what "note".

If you lost that file, you could go to http://nwc-scriptorium.org  and select helpful files, drum.nwc file that has the same concept.
