Is there any way of setting preferences like size and font type, instead of each time having to go back and change from "Times New Roman" etc
Have you tried creating your own templates, with the necessary info included?
Except for MIDI import, templates (as shown in File, New) are the answer to your question.

create a new song, change settings as you see fit, and save the (still blank) song in the Templates-directory. And use your template every time you create a new song.
