is it possible to create new instruments or tweak the old ones in Noteworthy if this is possible please reply. I'd really like to download some new ones or create a more authentic choirahh instrument. Thanks.

Unfortunately, in order to do this, you need to be using a sound card that has SoundFonts enabled, and download yourself a better SoundFont. You can't really create your own voices unless you're able to create a SoundFont.
