Hi,
Can I playback 3 out of 5 staff, or more than one out of many?

Tools | Mute List. Or, select the staves one by one and mute or unmute using the little speaker icon on the toolbar.

Just pressing M will bring up the mute list. Saves having to use Alt-T, M or clicking the Tools menu at the top of the screen.
