what is the best substitute for a gong in the Drum list for Channels 10 & 16? or is there a better one in the list of instruments?

Try Tubular Bells in a low pitched note. This has worked for me.

Someone once suggested that drums were better if you continue to use channel 10, but use one of the piano choices as the instrument setting for your drum staffs.

Then you can get various drum sounds by altering the notated pitch.  Use hidden staffs; mute the drum staff that you want to be displayed and printed, and do the notation of your drum sounds on the subsidiary staves, which you will then hide.

I think you'll find this gives you more choices of drums.
